You are sure to be the talk of all your friends with these festive surprises on the table! In the spirit of St. Patrick’s Day I went searching for green delights! Culled from the Joys of Jell-O circa 1962, these recipes just might blow your mind…unless of course you are already familiar with them. If so, consider this a trip down Memory Lane.
These are actually pretty tame…I am breaking you in gently. Jell-O is one of my favorite topics—no really, it is—so you can expect more in-depth explorations to come!
(The “o” in History in my logo above is a Jell-O mold…I’m not joking around!)
Let’s start with the oh-so versatile Vegetable Salad. It’s got to be difficult to get those veggies to suspend in an evenly distributed manner. Be sure to use Lime Jell-O to keep in the spirit of the holiday.
Now that your appetite has been whetted, let’s try Ring-Around-the-Tuna. That’s right, Ring-Around-the-Tuna. That’s fish in Lime Jell-O. Plus other stuff.
We round it out with something that actually doesn’t sound that bad, Minted Pineapple. Except I’m not sure why they tell you to make it in a can when there are so many lovely shaped molds available.
Please please tell me if you try one of these—I would love to hear about it! Or anyone who has had these recipes in the past, let’s hear some reviews!

LOVE LOVE LOVE your curiosity surrounding Jell-O!!! So much so that it was a paper you wrote in Grad School which inspired me to start my gelatin journey! I am stoked that you will be sharing more in the future! Cheers!
